A Favorite Recipe I Like to Call Pumpkin Pie Apple Spice Chocolate Chip Protein Muffins
One of the hardest meals of the day for me is breakfast. Most of the time I just opt for a protein shake. I tweaked this recipe from my trainer, (@trainerlindsey) and have LOVED IT! Super easy, filling, yummy, low carb, energy, and it has chocolate, so yeah.
These are also perfect for me to grab and take to the duck blind on early cold mornings, and pack along for snacks in the woods for energy and protein. The recipe makes 16 muffins, but 4 is one serving, so you can make extra for the week. You can also freeze them and pull them out the night before!
For protein powder, I only use IdealFit (www.idealfit.com) because it has 0 carbs, 80 calories, and 20 grams of pure whey protein. Seriously, it’s the best on the market.
Muffins (makes 16 muffins):
-1 scoop Vanilla or Apple Pie Spice IdealFit Protein Powder (use code Katey-RF for 10% off!)
-1 c oats
-1 c canned pumpkin
-2 c egg whites (I use the kind in the box because ain’t nobody got time for that)
-1 T baking powder
-1 T cinnamon
-1/2 t nutmeg
-1/2 t all spice (optional)
4 muffins = 1 serving
Blend all ingredients together in food processor or blender. Pour in either greased muffin tin or the cupcake liners. Put 4 chocolate chips on each muffin (this isn’t dessert y’all) and bake at 350 for about 20 min, or until they aren’t raw in the middle. ENJOY!
