American As…Blackberry Cobbler

Can we all agree the Fourth of July on a Wednesday is just a little weird? We just decided to have a week long party instead! So whether you celebrated last weekend, the middle of the week, this weekend, or all three, here’s an easy dessert that is as American as, well, blackberry cobbler.

 

I normally do not have a sweet tooth and don’t do much baking, at all, but this called for an exception. On the ranch in Oklahoma, blackberries are seen as more of a pest than a blessing and we are continuously spraying to control them. They are an extremely invasive species that if not controlled, can take over whole pastures quickly.

 

However, we have saved a few spots where you can pick blackberries until your fingers are stained purple and filled with needle thin thorns. Packed with vitamin C and antioxidants, they are a great summer snack!

 

I love the field to table process, no matter what it is, and making blackberry cobbler with your own blackberries you picked on horseback is just a little more fun! The recipe is surprisingly easy and if I can make it, I think anyone can.

 

Ingredients:

4 cups fruit

¾ cup sugar

¾ cup water

1 cup self-rising flour

1 cup milk

½ stick butter, melted

 

  1. Preheat oven to 350
  2. Boil the sugar in the water on the stove until dissolved (to form a simple syrup).
  3. Add fruit to simple syrup and let simmer for about 10 minutes. Prepare for kitchen to smell amazing!
  4. In large mixing bowl, combine melted butter, flour and milk and whisk together.
  5. Add fruit mixture to mixing bowl and gently stir together.
  6. Pour batter into large baking dish and bake for about 40 minutes.
  7. Sprinkle sugar on top, grab some vanilla ice cream and enjoy!
